Grilled Aubergine with Rice & Feta Salad and Tzatzki

Griddle aubergines sat on a bed of watercress served with tzatzki and a salad of rice, chilli, red peppers, lemon, parsley and feta

How it's doneDirections

Step 1

Cut the aubergine into lengthwise slices.

Score one side of the aubergine with a criss cross pattern, sprinkle with salt and leave for 10 minutes

Step 2

Rinse under cold water, Pat dry and brush with olive oil.

Place on a baking tray, grill for 4 to 5 minutes each side

Step 3

Sprinkle with balsamic vinegar, chilli flakes and oregano, set aside.

Step 4

Peel and chop the onion(s) finely.

Add to the frying pan, cook till soft.

Step 5

Wash and finely chop the chilli, add to the frying pan.

Step 6

Peel and crush the garlic using the garlic crusher or chop finely, add to the frying pan.

Step 7

Warm the precooked rice by following the instructions, add to the frying pan.

Step 8

Add the oregano to the frying pan.

Step 9

Zest and squeeze the lemon(s), add to the frying pan.

Step 10

Taste and season with salt and pepper if necessary. Remove from the heat

Step 11

Wash and dice the red pepper.

Wash and finely chop the fresh parsley, add to the frying pan.

Step 12

Mix the ingredients then set aside.

Step 13

Slice the aubergine diagonally.

Step 14

Cut the lemons into wedges.

Step 15

Place one serving of rice onto a plate.

Place the watercress on the plate.

Place the aubergine on top of the rice, crumble the cheese over the top.

Serve with the tzatziki and a couple of lemon wedges.

  • 1 Aubergine
  • 1 tsp Dried Oregano
  • 1 tbsp Balsamic Vinegar
  • 1 tbsp Olive Oil
  • Salt - to taste
  • Black Pepper - to taste
Salad
  • 1 Precook Long Grain Brown Rice
  • 1/2 Onion
  • 1 Garlic Clove
  • 1/2 tsp Fresh Chilli
  • 1/2 tsp Dried Oregano
  • 1/2 Lemon
  • 1 Bell Pepper (Red)
  • 1 handful Fresh Parsley
  • 35 grams Feta Cheese
  • 1 handful Watercress
To Serve
  • 1 tub Tzatziki
  • 1 lemon
