Courgette Wrap with Herby Tomatoes, Avocado & Parmesan Mayo

A Courgette wrap with crispy breaded courgette encased in salad leaves ans a soft wrap, with sweet roast tomatoes and fresh avocado served with savoury parmesan and garlic mayo

How it's doneDirections

Step 1

Set the oven to 190C 375F or gas mark 5.

Step 2

Peel and crush the garlic using the garlic crusher or chop finely.

Step 3

Finely grate the parmesan

Step 4

add the mayonnaise to the bowl, add the water, vinegar and garlic
to the bowl. Mix the dressing ingredients together. Add the parmesan to the bowl mix together.Taste and season with salt and pepper if necessary, set a side to infuse

Step 5

Peel sweet potatoes, cut into chips and place in a bowl.Combine the paprika, garlic salt and black pepper in a small bowl this forms the spice mix for the chips. Toss the chips in the oil and spice mix, when each chip is fully coated with the mixture place the chips on a baking tray. Place in the oven. Cook for 20 mins

Step 6

While the sweet potato chips are cooking cut the ends off the courgettes and cut a thin slither off each side of the courgette lengthwise. Cut each courgette into 4 slices lengthwise

Step 7

Place the breadcrumbs on a plate

Step 8

Break the egg(s) into the shallow bowl and beat with a fork. Season with salt and pepper.

Step 9

Place the flour on a plate.

Step 10

Lightly coat the baking tray with oil using a pastry brush.

Step 11

Organise the breading ingredients into a row with the flour first, then the egg and finally the breadcrumbs.

a. Take a slice of courgette and dip into the flour, ensuring the courgette slice is fully coated in flour shake off any access.

b. Dip the courgette in egg and then into the breadcrumbs mixture coating the courgette fully.

c. Place the crumbed courgette onto the oiled baking tray and dab the courgette with oil using the pastry brush.

d. Repeat for each slice of courgette.

e. Place in the oven

f. Bake for 15 minutes turning once part way through cooking

Step 12

While the courgettes are cooking wash the cherry tomatoes and then slice in half.

a. Place the tomato halves on the baking tray with a tbsp of olive oil mix the tomatoes in the oil.

b. Sprinkle the mixed herbs over the top.

c. Place in the oven

d. Cook for 10 mins

Step 13

Check the sweet potato chips and the courgette slices. Use a fish slice turn them over.

Step 14

Wash mixed leaves and place in a serving bowl.

a. Place a cross on the top of the cucumber, then slice the cucumber to form quarters. Sprinkle over the salad leaves.

b. Wash and chop the green pepper(s) into small pieces. Sprinkle over the salad leaves

 

Step 15

Warm the wraps in the microwave for 30 seconds or cover the wraps in foil and place in the oven for 5 mins till warm

Step 16

Cut the avocado(s)  in half remove the stone and skin, slice lengthways into thin slices

Step 17

Remove the courgettes and tomatoes from the oven.

Step 18

Place  salad leaves in the middle of the wrap

a. Add 4 slices of avocado to the wrap

b. Add about 10 tomato halves to the wrap

c. Place 2 slices of courgette into the wrap

d. Top with parmesan mayonnaise

e. Roll the wrap

f. Remove sweet potato chips from the oven

Step 19

Serve two wraps for each person

  • 3 tbsp Olive Oil
  • 1 tsp Dried Mixed Herbs(Italian)
Dressing
  • 2.5 tbsp Mayonnaise Light
  • 1 tsp White Wine Vinegar
  • 2 tbsp Water
  • 1 Clove of Garlic
  • 2 tbsp Parmesan
  • Salt - to taste
  • Black Pepper - to taste
Salad
  • 1/2 Cucumber
  • 40 grams Salad Leaves
  • 1/2 Bell Pepper (Green)
Chips
  • 3 Sweet Potatoes
  • 3 tbsp Olive Oil
  • 0.5 tsp Garlic Salt
  • 1 tsp Smoked Paprika
  • 1 tsp Black Pepper
  • 1/2 tsp Salt
