Chicken and chorizo Paella

A traditional Paella recipe with a mixture of chicken, chorizo and prawn, and a selection of vegetables , fennel, tomato and peppers served with parsley lemons and olives

How it's doneDirections

Step 1

  • Boil the water and add to the stock cube
  • Chop the chicken into chunks
  • Chop the chorizo into cubes
  • Peel and chop the onion(s) finely

Step 2

  • Wash and slice the peppers into strips
  • Wash and slice the fennel into strips
  • Heat the olive oil in the frying pan
  • Add the meat to the pan cook for 5 minutes

Step 3

  • Add the vegetables to the pan cook for 5 minutes
  • Peel and crush the garlic using the garlic crusher or chop finely add the garlic to the pan cook for a minute or two
  • Add the spices
  • Add the bay leaves cook for a minute or two

Step 4

  • Add the rice cook for a minute or two
  • Add the saffron turn up the heat
  • Add the white wine, cook till wine has evaporated
  • Add the stock turn down the heat cook gently
  • Cook for 15 mins to 20 mins do not stir
  • Taste and season with salt and pepper if necessary

 

Step 5

  • Add the tomatoes
  • Add the prawns cover with foil cook for 10 mins
  • Wash and finely chop the fresh parsley
  • Slice the lemons

Step 6

  • Remove the foil
  • Add the parsley
  • Sprinkle the olives on top
  • Serve with the lemon slices
  • Serve immediately

  • 1 large frying pan

  • 1/2 bell pepper (yellow)
  • 1/2 bell pepper (green)
  • 2 bay leaf
  • 2 clove garlic
  • 1/2 tsp smoked paprika
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne pepper
  • 1 tsp Saffron
  • 150 grams paella rice
  • 1 stock cube chicken
  • 100 ml white wine
  • 500 ml water
  • 250 grams cherry tomatoes
  • 2 chicken thighs (boned and skinned)
  • 70 grams chorizo
  • 200 grams prawns (frozen)
  • 10 black olives
  • 4 sprigs fresh parsley
  • 1 lemon
  • Salt - to taste
  • Black Pepper - to taste
