Char Siu Duck Legs with Asian Slaw

Spicy strips of duck marinaded in garlic, ginger, chilli, honey and soy sauce, served with an asian slaw made with carrots, cabbage, celery, red peppers spring onions and radishes dressed with a lime, honey soy and ginger dressing

How it's doneDirections

Step 1

Make the marinade, peel and crush the garlic using the garlic crusher or chop finely. Mix the marinade ingredients together, add to the rectangular pie dish. Add the duck, coat in the marinade refrigerate for at least two hours preferably overnight

Step 2

Set the oven to 180C 350F or gas mark 4 Remove the meat from the fridge, Drain the marinade reserve the marinade ensure the duck is skin side up Place in the oven, cook for 30 mins

Step 3

while the duck is cooking, squeeze the lime(s)
Mix the dressing ingredients together season with salt and pepper set a side

Step 4

Wash and chop the cabbage into fine strips, Peel the cucumber and chop into matchsticks, Peel and cut the carrots into matchsticks

Step 5

Wash and finely chop the fresh coriander, Wash and finely chop the mint. Mix the salad ingredients together
add 1/4 of the dressing, toss the salad set a side

Step 6

Place the marinade in a pan. Bring to the boil and boil for a few minutes cook until the mixture is thick and syrupy

Step 7

Toast the seeds in the frying pan, set a side to cool

Step 8

Remove the duck from the oven, brush with the marinade. Return to the oven cook for 30 mins or until the duck is tender remove from the oven.
Sprinkle with sesame seeds then shred the meat using two forks

Step 9

place on a serving plate add the salad serve with additional dressing serve immediately

salad
  • 40 grams white cabbage
  • 40 grams red cabbage
  • 1/2 cucumber
  • 1 carrot
  • 1 handful coriander
  • 1 handful mint
Dressing
  • 1 tbsp sunflower oil
  • 11/2 tbsp soy sauce
  • 1/2 tbsp lime
  • 1/2 tbsp honey
  • 1/2 tbsp mirin
  • pinch salt
