Carrot & Chickpea Burger with Barbecue Sauce

Spiced Smoked paprika burgers made with carrot, chickpea, red onion and apricot, served in a seeded roll with a homemade barbecue sauce

How it's doneDirections

Step 1

  • Set the oven to 190C 375F or gas mark 5
  • Peel and chop the garlic

Step 2

Make the barbecue sauce.

  • Peel and chop the onion(s) finely, add the onions to a pan.
  • Take a third of the garlic and add to the pan, cook for a minute or two

Step 3

  • Add the chilli powder, cook for a minute or two remove from the heat.
  • Boil the water and add to the stock cube.
  • Add the Worcester sauce, tomato puree, vinegar, mustard, sugar , stock
    to the sauce.
  • Cook until the sauce thickens (about 15 to 20 mins) set a side

 

Step 4

  • Peel sweet potatoes.
  • Cut into chips and place in a bowl.
  • Combine the paprika, garlic salt and black pepper in a small bowl this forms the spice mix for the chips.
  • Toss the chips in the oil and spice mix.
  • When each chip is fully coated with the mixture place the chips on a baking tray.
  • Place in the oven, cook for 20 mins

Step 5

  • Heat the olive oil in the frying pan.
  • Peel and finely chop the red onion.
  •  Add the onions to the frying pan and cook until soft
  • Add the remaining garlic to the pan
  • Add the cumin and smoked paprika
    fry for approx 1 minute to bring out the flavour of the spices

Step 6

  • Peel and grate the carrots.
  • Wash and finely chop the fresh coriander.
  • Drain the chickpeas and wash, place the chickpeas into the food processor

Step 7

  • Add the red onion mixture.
  • Add the apricots and the egg and salt
  • Blend together in the food processor

Step 8

  • Empty the contents of the food processor into a large bowl.
  • Add the grated carrot, gram flour and coriander, leave for five minutes.
  • Take a large spoonful of the mixture and with damp hands shape the mixture into burgers

Step 9

  • Heat the olive oil in the frying pan.
  • Add the burgers, fry till golden brown
  • Flip a couple of times to ensure an even colour

Step 10

  • Remove sweet potato chips from the oven
  • Cut the seeded bun in half
  • Place a lettuce leaf on each bun
    Add a burger, add a couple of slices of tomato.
  • Top with barbecue sauce
    Serve immediately with the sweet potato chips

  • 1 tsp ground cumin
  • 3 cloves garlic
  • 1 tsp smoked paprika
  • 60g dried apricots
  • 1 tbsp olive oil
  • 1 egg
  • 1 handful fresh coriander
  • 5 tbsp gram flour
  • 2 seeded rolls
  • 1 tomato
  • 2 lettuce leaves
  • black pepper to taste
  • Salt to taste
Sauce
  • 1 onion
  • 1/2 tsp mustard
  • 1 tbsp worcester sauce
  • 2 tbsp white wine vinegar
  • 2 tbsp sugar brown
  • 1/2 tsp chilli powder
  • 180 ml water
  • 1/4 stock cube veg
  • 1 tsp black pepper
  • 1 tsp salt
Chips
  • 3 sweet potatoes
  • 3 tbsp olive oil
  • 0.5 tsp garlic salt
  • 1 tsp smoked paprika
  • 1 tsp black pepper
  • 1/2 tsp salt
