Beef Chilli Con Carne

A hot beef chilli with red peppers, kidney beans and a hint of dark chocolate , sprinkled with coriander and served with rice

How it's doneDirections

Step 1

 

  • Heat the olive oil in the frying pan.
  • Peel and chop the onion(s) finely, add to the frying pan
  • Peel and crush the garlic using the garlic crusher or chop finely add to the frying pan

Step 2

  • Wash and finely chop the chilli add to the frying pan cook for 3 to 4 mins
  • Add the spices cook for a minute or two
  • Wash and slice the peppers into strips add to the frying pan cook for 3 to 4 mins
  • Empty the contents of the frying pan on to a plate set a side

Step 3

  • heat the remaining oil in the frying pan
  • Add the mince beef to the pan seal and brown the meat
  • Add the onion and pepper mixture to the pan
  • Drain the beans and wash in cold water add to the frying pan
  • Add the tinned tomatoes
  • Add tomato puree cook for a minute or two

Step 4

  • Add the stock cube to boiling water add the stock to the pan
  • add the oregano cook slowly for 45 minutes
  • add the chocolate stir till chocolate has melted
  • Taste and season with salt and pepper if necessary

Step 5

  • Warm the precooked rice by following the instructions
  • Wash and finely chop the fresh coriander

Step 6

  • Place one serving of rice onto a plate
  • Place the chilli on top of the rice
  • Sprinkle with coriander serve immediately

  • 250 grams mince beef
  • 2 tbsp olive oil
  • 1 onion
  • 11/2 fresh chilli
  • 2 tsp chilli flakes
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp cinnamon
  • 1/2 bell pepper (red)
  • 1 tbsp tomato puree
  • 1 tin tomatoes
  • 1 garlic clove
  • 300 ml water (boiling)
  • 1/2 stock cube beef
  • 15 grams Chocolate (Dark)
  • 1 tin kidney beans
  • dried oregano
  • salt - to taste
  • black pepper - to taste
  • 3 sprigs fresh coriander
  • 1 packet precook long grain and wild rice
