A traditional spaghetti bolognese made with minced beef, pancetta, onions, tomatoes, carrots flavoured with garlic, Worcester sauce, oregano, bay leaves and Chianti, The beefy bolognese is served with al dente spaghetti and grated parmesan and tasty garlic bread. 

Recipe Ingreds

Pasta

  • 150 grams spaghetti

Sauce

  • 1 leaves bay leaf
  • black pepper (to taste)
  • 1 whole carrots
  • 1 stick celery
  • 0.5 tsp oregano (dried)
  • 1 cloves garlic
  • 250 grams mince beef
  • 75 grams chestnut mushroom
  • 1 tbsp olive oil
  • 0.5 whole onions
  • 60 grams pancetta
  • 175 ml Chianti red wine
  • salt (to taste)
  • 1 tin tinned tomatoes
  • 2 tbsp tomato puree
  • 1.5 tsp worcester sauce

Bread

  • 1 stick garlic bread

Step 1

  • heat the olive oil in the frying pan
  • peel and chop the onion(s) finely
  • add to the frying pan
  • dice the pancetta
  • add to the frying pan
  • cook for 3 to 4 mins

Step 2

  • wash and dice the celery
  • add to the frying pan
  • peel and crush the garlic using the garlic crusher or chop finely
  • add to the frying pan
  • cook for 3 to 4 mins

Step 3

  • wash and slice the mushrooms
  • add to the frying pan
  • cook for 3 to 4 mins
  • peel and grate the carrots
  • add to the frying pan
  • lower the heat
  • cook the vegetables till they caramelise

Step 4

  • add the mince beef to the frying pan
  • cook till brown

Step 5

  • add the oregano, bay leaves, canned tomatoes, red wine, tomato puree and Worcester sauce to the frying pan
  • boil and then simmer
  • taste and season with salt and pepper if necessary
  • cook for 25 mins
  • 15 minutes before the bolognese is cooked
  • set the oven to 200C 400F or gas mark 6
  • if cooking extra for the freezer store the extra bolognese in a freezable container allow to cool and then place in freezer

Step 6

  • when the oven is at the correct temperature
  • put the garlic bread on the baking tray and place in the oven follow cooking instructions on packaging

Step 7

  • half fill a pan with water and boil
  • add a spot of olive oil and a pinch of salt to the boiling water
  • add the pasta to the boiling water and cook until tender but with a slight bite

Step 8

  • drain the pasta
  • divide the pasta between the serving plates

Step 9

  • add the bolognese on the top

Step 10

  • remove garlic bread from the oven
  • serve the pasta with garlic bread

A simple classic bolognese sauce made with mince beef, pancetta, carrots and mushrooms, gently simmered in tomato sauce flavoured with bay leaves, oregano, red wine and Worcester sauce 

To make homemade bolognese sauce

Our bolognese is made from onions, celery, garlic and pancetta lightly fried,. Then sliced mushrooms are added to the pan and cooked till caramelised and brown. Grated carrot and mince are added to the pan and cooked till coloured. The tinned tomatoes are added to complete the sauce's main ingredients. The bolognese is flavoured with bay leaves, oregano, red wine, and Worcester sauce and then simmered till the meat is tender

To make homemade spaghetti bolognese

While the bolognese sauce is cooking cook the spaghetti and then place the spaghetti in a serving bowl and top with the bolognese, serve with buttery garlic bread.

Yes, this sauce freezes perfectly, once the sauce is cooked, place the sauce in a freezer-proof dish and allow it to cool fully before freezing. Remove from the freezer and allow to defrost, reheat till piping hot.

Wine - bolognese needs wine and our preference is chianti or other similar red wines
