Cheese and Bean Burritos with Avocado Recipe

A tasty cheese and bean burrito with crushed kidney beans, tomatoes and cumin, topped with creamy coriander and lime avocado, sour cream and grated cheddar cheese all encased in a soft burrito wrap. The burritos are served with crispy sweet potato chips flavoured in smoked paprika and garlic and a simple green salad.

Recipe Ingreds

burritos

  • 1 whole avocado
  • black pepper (to taste)
  • 40 grams cheddar cheese
  • 12 sprig fresh coriander
  • 2 cloves garlic
  • 1 tsp ground cumin
  • 1 tin tinned kidney beans
  • 1 whole lime
  • 1 tbsp olive oil
  • salt (to taste)
  • 2 whole tomatoes
  • 4 single wraps
  • 0.5 whole onions
  • 0.5 tsp chilli flakes
  • 120 ml sour cream

Chips

  • 1 tsp black pepper
  • 0.5 tsp garlic salt
  • 1.5 tbsp olive oil
  • 1 tsp smoked paprika
  • 3 whole sweet potato

Salad

  • 0.5 whole cucumber
  • 40 grams Salad leaves
  • 0.5 whole bell pepper (yellow)

  • set the oven to 190C 375F or gas mark 5
  • combine the paprika, garlic salt and black pepper in a bowl
  • peel the sweet potatoes and cut into chips, add to the spice mix with the oil and toss till fully coated
  • place in the oven
  • cook for 20 mins

  • heat the olive oil in the frying pan
  • peel and chop the onion(s) finely
  • add to the frying pan

  • peel and crush the garlic using the garlic crusher or chop finely add to the onions
  • add cumin and chilli flakes
  • fry for approx 1 minute to bring out the flavour of the spices

  • Drain the beans and wash in cold water, add to the onion mixture
  • Gently squash some of the beans with a fork

  • wash and chop the tomatoes, add to the bean mixture
  • cook for a minute or two
  • taste and season with salt and pepper if necessary
  • set a side

  • cut the avocado(s) in half remove the stone and skin, slice lengthways into thin slices
  • add to a small bowl
  • mash with a fork

  • wash and finely chop the fresh coriander
  • add to the avocado

  • squeeze the lime(s)
  • add the lime juice to the avocado
  • season with salt and pepper

  • wash mixed leaves and place in a serving bowl.
  • place a cross on the top of the cucumber
  • then slice the cucumber to form quarters
  • sprinkle over the salad leaves
  • wash and chop the yellow pepper(s) into small pieces
  • sprinkle over the salad leaves

  • warm the wraps in the microwave for 30 seconds or cover the wraps in foil and place in the oven for 5 mins till warm
  • grate the cheese

  • to make the burrito spread a little sour cream over the wrap

  • then pile the beans and avocado and cheddar cheese in the middle of the wrap . Bring the bottom up
  • then fold the side in to make a cup like object

  • remove sweet potato chips from the oven

  • serve two bean and cheese burritos for each person
  • add the chips and salad

What are burritos

Burritos are a traditional Mexican dish often eaten by hand, they consisting of warm flour tortilla stuffed with a meat traditionally chicken, beef or pork, with a medley of rice or cooked beans, vegetables, cheese and a choice of sauces. 

How to make cheese and bean burritos

to make the filling, lightly fry the onions and garlic till soft, add the drained kidney beans and crush with a fork add the tomatoes and cumin to the beans cook till the sauce thickens. While the bean mixture is cooking prep the avocados, peel and mash them with lime and fresh chopped coriander. To create the burrito add the kidney bean mixture, then the mashed avocado, then grated cheddar cheese and finish with a dollop of sour cream, fold into a burrito and serve. To make the sweet potato chips, peel and chop the potatoes into chips, add the chips to a bowl with some oil, smoked paprika, garlic salt and black pepper. Toss the chips and then spread then on a roasting tray and pop in the oven, cook for about 20 minutes.

These cheese and bean burritos are perfect for a quick weekend dinner and are guaranteed to be a hit with all the family, we like to eat them the healthy way, but if you like your burritos crispy, then fill the tortilla with the bean and tomato mixture and the grated cheese fold in the ends and roll tightly. Shallow fry in a frying pan and then drain on kitchen paper, serve them with the avocado dip and sour cream on the side.. You can serve our burritos with
