Slice the potatoes, peppers and onions and, fry with crushed garlic till soft allow to cool a little. Beat the eggs in a bowl, add the contents of the frying pan into the eggs with the chopped parsley, grated cheese and paprika and mix. Add the mixture back to the frying pan and cook till the eggs are set and then brown under the grill.
This recipe is so simple and quick to cook we have added peppers and manchego cheese to a traditional potato and onion tortilla to give extra flavour and texture, the star ingredient that makes this dish special is the addition of smoked paprika.
