Chicken goujons cooked in a delicious Mexican tomato chipotle sauce, flavoured with cinnamon, paprika, chipotle paste, fresh thyme and coriander. This Mexican chicken dish is served with lime and coriander rice.

Slice the chicken into goujons and seal the goujons in a frying
pan cook till golden brown remove the chicken and set aside. Add the sliced red
onion and cook till soft add the crushed garlic cook for a minute or two, then
add the chopped tomatoes, cook for five minutes. Add the contents of the frying
pan to a food processor with the thyme leaves cinnamon, paprika sugar and
chipotle paste and blend. Return the chicken to the frying pan with the blended
sauce and the lime juice and season with salt and pepper. Add the coriander and
cook for 10 minutes
Cook the rice in boiling water till soft, rinse and drain
the rice return to the pan and add the lime juice and zest and chopped
coriander
