Classic cream profiteroles coated in chocolate sauce

Chocolate Profiteroles Recipe

Cream filled profiteroles packed with freshly whipped cream and topped with a simple chocolate sauce

Recipe Ingreds

Pastry

  • 85 grams butter
  • 3 whole egg
  • 100 grams plain flour
  • 200 ml water

Filling

  • 500 ml double cream

chocolate sauce

  • 15 grams cocoa powder
  • 35 grams icing sugar
  • 60 ml water

Recipe with pictures Steps

Step 1

  • cut the butter into cubes
  • Place the butter and water in a pan
  • place the pan on the heat
  • melt the butter and then boil
  • add the flour beat till smooth
  • cook for a couple of minutes stir continuously
  • remove the pan from the heat

Step 2

  • add the egg(s) to a bowl
  • beat the eggs

Step 3

  • add the eggs a bit at a time to the pan beat till smooth
  • set the oven to 200C 400F or gas mark 6

Step 4

  • place the pastry in a piping bag with a plain nozzle
  • pipe small circles about 5 cms with a smaller circle on top onto a damp baking tray

Step 5

  • flatten any peaks left from piping with a knife
  • place in the oven
  • cook for 30 mins
  • till well risen and crisp
  • remove from the oven
  • Leave to cool

Step 6

  • whip the cream to form soft peaks
  • place the whipped cream in a piping bag
  • insert the nozzle of the piping bag into the base of the profiterole
  • fill the profiterole with cream

Step 7

  • mix the sauce ingredients together to form a thick sauce
  • coat the top of the profiteroles with the sauce

Step 8

  • serve 3 to 4 profiteroles
  • with the chocolate sauce

  • 1 Plain piping noozle
  • 2 small bowl

What are profiteroles

Profiteroles are small balls of choux pastry that are baked in the oven, they originate from France and are usually filled with whipped cream, custard or pastry cream. The profiteroles are usually topped with chocolate sauce or caramel or just dusted with icing sugar. 

How to make fresh cream profiteroles with chocolate sauce

To make the perfect choux pastry, add the butter and water till it is boiling, add the flour and beat till smooth cook for a minute or two and remove from the heat cool a little and then add the beaten eggs bit by bit. Pipe the pastry into small balls and baked till crisp. The profiteroles are left to cool and then filled from the base with whipped cream . Finally the profiteroles are topped with a simple chocolate sauce by mixing together icing sugar, cocoa powder and water.
