Easy beef stroganoff and white rice

Beef Stroganoff Recipe

Serves: 2

A creamy beef stroganoff made with strips of sirloin or fillet steak and sliced mushrooms cooked in brandy and sour cream sauce, flavoured with paprika. The stroganoff is served on a bed of white rice and sprinkled with freshly chopped parsley.


Recipe Ingreds

Stroganoff

  • black pepper (to taste)
  • 2 tbsp brandy
  • 15 grams butter
  • 5 sprig fresh parsley
  • 2 cloves garlic
  • 2 tsp fresh lemon juice
  • 125 grams chestnut mushroom
  • 1 onions
  • 2 tsp paprika
  • salt (to taste)
  • 2 sirloin Steak
  • 45 ml sour cream
  • 2 tsp olive oil

Rice

  • 1 microwave white rice

Recipe with pictures Steps

Step 1

  • peel and crush the garlic
  • cut the steaks into thin strips
  • peel and chop the onion(s) finely

Step 2

  • heat the frying pan
  • add the butter and a spot of oil to the frying pan
  • add the onions
  • cook till soft
  • add the garlic to the frying pan

Step 3

  • wash and slice the mushrooms
  • add the mushrooms to the frying pan
  • shallow fry till golden brown
  • empty the contents of the frying pan on to a plate
  • set a side

Step 4

  • reheat the frying pan
  • add a spot of the oil
  • fry the steak in batches
  • cook till lightly browned

Step 5

  • return the steak to the pan
  • add the brandy
  • cook off the alcohol
  • add the paprika
  • cook for a minute or two

Step 6

  • return the mushroom mixture to the frying pan
  • squeeze the lemon(s) .
  • add the sour cream and lemon juice to the frying pan
  • heat gently

Step 7

  • wash and finely chop the fresh parsley
  • add the parsley saving a little for sprinkling over the stroganoff
  • cook for a minute or two
  • season with salt and pepper

Step 8

  • warm the precooked rice by following the instructions
  • place the rice in individual serving dishes

Step 9

  • place the stroganoff on top of the rice
  • Sprinkle with parsley
  • serve immediately

What is Stroganoff

Stroganoff originates from Russia and was created for the influential Stroganov family. The original stroganoff recipe was beef only with no additional vegetables or alcohol. 

What is Stroganoff Sauce

The majority of stroganoffs use sour cream as the sauce base, with the addition of some form of alcohol such as brandy or white wine. The sauce is seasoned with paprika & parsley. Some stroganoff sauce have a tomato and double cream base as an alternative to the sour cream. 

Stroganoff alternatives

There are number of different variations of stroganoff using different seasoning and rubs for the beef. Different vegetables can be added to the stroganoff, the most common are mushrooms and onions. Stroganoff is a quick cook dish so the best beef to use for this dish is sirloin or rump steak. All stroganoffs have a sour cream sauce
