Easy beef stroganoff with rice

Beef Stroganoff Recipe

Creamy beef stroganoff with mushrooms,  strips of beef steak and sliced mushrooms cooked in a traditional stroganoff sauce, flavoured with paprika, served on a bed of white rice and sprinkled with freshly chopped parsley.

Recipe Ingreds

Beef Stroganoff

  • black pepper (to taste)
  • 2 tbsp brandy
  • 15 grams butter
  • 5 sprig fresh parsley
  • 2 cloves garlic
  • 2 tsp fresh lemon juice
  • 125 grams chestnut mushroom
  • 1 whole onions
  • 1.5 tsp paprika
  • salt (to taste)
  • 2 whole sirloin Steak
  • 60 ml sour cream
  • 1 tbsp olive oil

Rice

  • 1 packet microwave white rice

How to make beef stroganoff with rice

  • peel and crush the garlic
  • cut the steaks into thin strips
  • peel and chop the onion(s) finely

Step 2

  • heat the frying pan with the butter and a spot of oil
  • add the onions
  • cook till soft
  • add the garlic to the onions

Step 3

  • wash and slice the mushrooms
  • add the mushrooms to garlic and onions
  • shallow fry till golden brown
  • empty the contents of the frying pan on to a plate
  • set a side

Step 4

  • reheat the frying pan with a spot of oil, make sure its nice and hot
  • fry the steak in batches till sealed and golden brown, about 30 secs
  • return all the steak to the pan
  • add the brandy and boil off the alcohol
  • add the paprika
  • cook for a minute or two

Step 5

  • add the mushrooms to the steak
  • squeeze the lemon(s) .
  • add the sour cream and lemon juice to the steak and mushroom mixture
  • heat gently

Step 6

  • wash and finely chop the fresh parsley
  • add the parsley saving a little for sprinkling over the stroganoff
  • cook for a minute or two
  • season with salt and pepper

Step 7

  • warm the precooked rice by following the instructions
  • place the rice in individual serving dishes

Step 8

  • place the stroganoff on top of the rice
  • Sprinkle with parsley
  • serve immediately

Recipe Tips

  • Cook the beef strips in batches to avoid overcooking or “boiling” the meat
  • Do not fully cook the steak strips as they will cook further in the sauce just sear and colour the meat

  • Steak - A good quality steak such as rump, sirloin or rib eye are ideal 
  • Mushrooms - a strong savoury flavour goes well fir this dish so when available we use chestnut mushrooms, but regular mushrooms or Portobello mushrooms are both ok 
  • Herbs and spices the main flavouring for this dish is paprika and garlic with a sprinkle of parsley for freshness

Sauce for beef stroganoff

  • Sour cream - sour cream adds a cream sourness to this dish, if you don't have any sour cream you can use regular cream with extra lemon juice
  • Brandy - Any Brandy is ok for this dish

What is Stroganoff

It originates from Russia and was created for the influential Stroganov family. The original recipe was beef steak only with no additional vegetables or alcohol. The majority of recipes use sour cream as the sauce base, with the addition of some form of alcohol such as brandy or white wine. The sauce is seasoned with paprika and parsley. Some sauces have a tomato and double cream base as an alternative to sour cream. There are several different variations of stroganoff using different seasonings and rubs for the beef. Different vegetables can be added, the most common are mushrooms and onions.
