A simple stew made with cauliflower, green beans, courgettes, tomatoes, peas and cannellini beans flavoured with french herbs and topped with cheddar cheese dumplings. Serve the veggie stew with crispy jacket potatoes
Prepare all the vegetables by wash them, cut the cauliflower into florets, trim the green beans, cut the courgettes into chip. Lightly fry the onions and garlic till soft, add the cauliflower, cook for 5 mins then add the courgette chips and green beans, then add the drained cannellini beans, french herbs, yeast extract, tomatoes and veggie stock. Season with salt and pepper and then transfer to a casserole dish and cook in the oven for 10 minutes. While the stew is cooking make the cheese dumplings, rub together the flour and butter add the grated cheese and form into dumplings. Remove the dish from the oven and place the cheese dumplings on top, place back in the oven and cook for about 15 minutes until the dumplings are cooked and golden brown.

If you are on a healthy eating campaign omit the cheese dumplings, but we think they are worth the extra calories.

This dish is ideal for freezing, cook the stew and leave to cool in a freezer container ,make the dumpling, and place on top and freeze.
