Strawberry Pancakes with Orange Custard

Strawberry Pancakes with Orange Custard – Sweet pancakes stuffed with fresh strawberries slices and coated in a rich orange custard sauce

Step 1

melt the butter

sieve the flour add to the bowl

Step 3

make a well in the centre of the flour, add the egg(s) incorporate the flour slowly into the eggs until you have a paste, add some of the milk if it gets to stiff once combined add the rest of the milk

Step 4

add the butter, add the sugar, beat till blended together and forms a smooth batter

Step 5

heat the frying pan till very hot, add a spot of oil.
Take a couple spoonful of the batter and place in the frying pan to form the pancake, swirl the pan so the mixture goes to the edge of the pan, cook till the middle is set flip the pancake, cook till golden brown. Place on a plate repeat till all the mixture is used

Step 6

add the sugar and egg yolk to the bowl, whisk the eggs and sugar until pale and thick, add the flour

add the vanilla essence, whisk till glossy and smooth

Step 8

heat the milk in a pan till just below boiling point
pour the milk into the eggs whisking all the time

Step 9

place the mixture in a clean pan and stir on a low heat till the custard thickens, empty the contents of the pan into a bowl cover with cling film directly onto the custard to stop it forming a skin Cool

Step 10

wash the strawberries, dry the strawberries, hull the strawberries, cut the strawberries into slices, set a side on a plate

Step 11

squeeze the orange, zest the orange, add to the custard

Step 12

add enough custard to the strawberries to bind them
place the strawberry custard into the pancakes and fold over

Step 13

place 2 pancakes per person on a serving plate add the custard pop in the microwave to warm. Add the cream
serve immediately
