Duck Orange and Honey Stir Fry

Strips of crispy duck coated in a garlic, ginger, honey and orange sauce, served with a medley of green vegetables

How it's doneDirections

Step 1

  • Zest the orange.
  • Peel and crush the garlic using the garlic crusher or chop finely.
  • Peel and grate the ginger.
  • Mix the marinade ingredients together.
  • Skin the duck breast, cut into strips.
  • Place the duck in the marinade.
  • Refrigerate for at least two hours preferably overnight

 

Step 2

  • Take the duck out of the fridge.
  • Wash and chop the pak choy.
  • Wash and slice the asparagus.
  • Wash and cut the broccoli into florets.
  • Wash and finely slice the spring onions .

Step 3

  • Squeeze the orange.
  • Heat the wok, toast the seeds in the pan.
  • Remove from the pan and set a side.

Step 4

  • Return the wok to the heat, add the oil.
  • Add the duck to the wok, cook for 3 to 4 mins.
  • Remove from the pan and set a side.

Step 5

  • Add the green vegetables to the wok, cook for 3 to 4 mins.
  • Add the remaining marinade.
  • Add the orange juice cook for a minute or two.
  • Allow the sauce to thicken

Step 6

  • Return the duck to the wok warm through.
  • Share the contents of the pan equally between the serving plates.
  • Sprinkle with sesame seeds

  • 1 tbsp sunflower oil
  • 2 pak choy
  • 100 grams asparagus
  • 200 grams broccoli
  • 1 bunch spring onions
  • black pepper to taste
  • Salt to taste
