Courgette Meatballs

Courgette, chilli, ginger & coriander balls coated in a creamy tomato, turmeric, cumin, cayenne, and garam masala sauce, served on a bed of warm brown rice.

How it's doneDirections

Step 1

Peel and chop the onion(s) finely.

Step 2

Wash trim and grate the courgette, place in a bowl. Sprinkle with salt, set a side for 5 minutes

Step 3

Squeeze out the access water from the courgettes. Reserve the liquid, place the courgette in a bowl.

Step 4

wash and finely chop the chilli, add to the bowl

Step 5

Peel and chop the onion(s) finely, add to the bowl

Step 6

Peel and grate the ginger, add to the bowl

Step 7

Wash and finely chop the fresh coriander, add to the bowl

Step 8

Add the gram flour, mix the ingredients

Step 9

Form the mixture into egg size balls. Heat about 1 cm oil in a frying pan. Add the courgette balls and fry, until golden brown in batches. Drain on kitchen paper set a side on a plate

Step 10

Prick tomatoes and place in boiling water for 5 mins. Drain the tomatoes and place in cold water. Remove the skins from the tomatoes. Chop tomatoes and remove any hard central parts of the tomatoes

Step 11

Peel and chop the onion(s) finely

Step 12

Heat the oil in the frying pan, add the onions cook till soft

Step 13

Courgette balls sauce onions and spices

Step 14

Add the chopped tomatoes to the frying pan, cook for 5 minutes. Add the courgette juice, cook for 10 mins

Step 15

Add the cream, add the garam masala. Season with salt and pepper, Cook for a minute or two

Step 16

Add the courgette balls to the sauce, cook for 10 mins

Step 17

Cook the rice using the cooking instructions. Place the rice in individual serving dishes. Add the courgette balls. Coat with a little sauce, serve immediately

  • 30 grams gram flour
  • sunflower oil for frying
Sauce
  • 1 tbsp sunflower oil
  • 1 onion
  • 1/4 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 1 tsp ground cumin
  • 2 tsp ground coriander
  • 150 grams tomatoes
  • 250 ml double cream
  • 1/2 tsp garam masala
  • Salt to taste
  • pepper to taste
  • 1 packet precooked brown rice
