Crispy Coconut Prawns in Tangy Mango Sauce Recipe

This simple but delicious Caribbean coconut prawn starter is ideal for dinner parties. The prawns are coated in desiccated coconut and fried till crispy, served with a tangy mango sauce made with fresh mango, mango chutney and mayo

Recipe Ingreds

Sauce

  • 0.5 whole mango
  • 1.5 tbsp mango chutney
  • 1.5 tbsp mayonnaise light

Prawns

  • black pepper (to taste)
  • 50 grams desiccated coconut
  • 15 grams corn flour
  • 1 whole egg (white)
  • 175 grams king prawns (raw)
  • salt (to taste)
  • 1 . sunflower oils (for frying)

Step 1

  • peel and chop the mangos
  • add to the hand liquidiser
  • liquidise to a puree
  • set a side

Step 2

  • add the mayonnaise to the bowl
  • Add the chutney

Step 3

  • add the mango puree to the mayonnaise
  • mix the ingredients
  • cover with cling film
  • Refrigerate

Step 4

  • place the corn flour on a plate and season with salt and pepper
  • place the egg white in a bowl
  • place the coconut on a plate
  • place the coating ingredients in a row, cornflour then egg white and then coconut

Step 5

  • toss the prawns in the corn flour
  • dip each prawn into the egg white and then the coconut
  • Repeat till all the prawns are covered in coconut

Step 6

  • heat about 21/2 cms of frying oil in a frying pan
  • fry the prawns in batches for 2 to 3 mins
  • Drain on kitchen paper
  • keep warm
  • serve the prawns with the dipping sauce
