Bean and Vegetable Hotpot

A stew made with a delicious medley of vegetable including cauliflower, green beans, courgettes, peas, tomatoes and cannellini beans flavoured with French mixed herbs and topped with cheddar cheese dumplings. Served with piping hot crispy jacket potatoes.

How it's doneDirections

Step 1

  • Wash the vegetables
  • Cut the cauliflower into florets
  • Trim the green beans
  • Wash the courgettes chop into chip shapes

Step 2

 

  • Heat the olive oil in the frying pan.
  • Peel and chop the onion(s) finely, add to the frying pan cook for 5 minutes
  • Peel and crush the garlic using the garlic crusher or chop finely add to the frying pan

Step 3

  • Add the cauliflower to the pan cook for 5 minutes
  • Add the courgettes to the pan cook for 3 to 4 mins
  • Add the mixed herbs
  • Add the green beans cook for 2 minutes
  • Drain and rinse the cannellini beans add to the pan

Step 4

  • Add the peas cook for 2 minutes
  • Set the oven to 190C 375F or gas mark 5
  • Add the tinned tomatoes

Step 5

  • Add the stock cube to boiling water add the stock to the pan
  • Add the yeast extract to the pan
  • Add the contents of the frying pan to the casserole dish place in the oven cook for 10 mins
  • wash the potatoes cook in the microwave for 4 mins place in the oven with the stew

Step 6

  • Grate the cheese
  • Mix the flour, butter and cheese together
  • Take a tablespoon of mixture coat in the rolled oats and shape into dumplings
  • Add the dumplings to the stew place in the oven cook for 10 mins to 15 mins

Step 7

  • Remove the stew and jacket potatoes from the oven
  • Place the stew on the plate with 2 dumplings
  • Cut a cross on the top of the jacket and squeeze the potato to open it up add some butter
  • Serve immediately

  • 1 tbsp olive oil
  • 2 garlic cloves
  • 1 onion
  • 1/2 cauliflower
  • 55 grams green beans
  • 1/2 courgette
  • 75 grams peas(frozen)
  • 1 tin tomatoes
  • 1 tsp Dried mixed herbs(french)
  • 1/2 stock cube veg
  • 500 ml water (boiling)
  • 1 tsp yeast extract
  • salt - to taste
  • black pepper - to taste
cheese dumpling
  • 70 grams self raising flour
  • 55 grams butter
  • 25 grams cheddar cheese
  • 25 grams oats
