Chorizo and Sweet Potato Pizza

A crispy pizza topped with chorizo, sweet potato, manchego cheese and mozzarella served with a cress and almond salad with a delicious sour cream ,garlic, parsley and chive dressing

How it's doneDirections

Step 1

Set the oven to 190C 375F or gas mark 6

Step 2

Prepare the dough by following the instructions on the packaging.

Step 3

Peel and thinly slice the potatoes, peel and finely slice the onion(s). Wash and finely chop the fresh rosemary, finely slice the chorizo

Step 4

Grate the cheeses, add 3/4 of the cheese on top of the pizza

Step 5

Sprinkle the rosemary on top of the pizza. Place the sweet potato on top of the pizza. Place the chorizo on top of the pizza. Place the red onion on top of the pizza

Step 6

Place the remaining cheese on top of the pizza. Place in the oven cook for 20 mins

Step 7

Toast the almonds

Step 8

Mix the dressing ingredients together, wash mixed leaves and place in a serving bowl. Add the dressing to the salad, toss the salad sprinkle with almonds

Step 9

Remove the pizza from the oven. Place a slice of pizza on a serving plate serve with salad

  • 200 grams pizza dough
  • 1 sweet potato
  • 100 grams chorizo
  • 1 red onion
  • 1 tsp rosemary
  • 50 grams mozzarella
  • 50 grams manchego
  • salt to taste
  • pepper to taste
Salad
  • 20 grams flaked almonds
  • 1 packet cress
  • 80 grams salad leaves
Dressing
  • 50 ml sour cream
  • 30 ml mauonnaise light
  • 1 garlic clove
  • 2 tbsp water
  • 1/2 tbsp fresh lemon juice
  • 1/2 tbsp honey
  • 1 tbsp fresh chives
  • 1 tbsp fresh parsley
  • salt to taste
  • pepper to taste
