This caribbean menu is full of traditional herbs spices and ingredients from the Caribbean. The menu starts with prawns coated in desicated coconut fried till golden and crisp, the prawns are served with a spicy mango dip. The main is a traditional jerk chicken served with a spicy root vegetable and bean stew. The dessert is a traditional English dish with a Caribbean twist a delicious bakewell tart flavoured with rum and lime

This menu is medium difficulty as the starter needs to be cooked to order, and the bakewell can be a little difficult to cook if you haven't made one before.

Cooking Order

Day before    

  • make the bakewell tart allow to cool and store in an airtight container 
  • make the mango dip 
  • make the jerk marinade and marinate the chicken              
Morning of party    
  • coat the prawns in the coconut place in the fridge
Two hours before
  • make the vegetable and bean stew dont place in the oven cover the frying pan and leave to cool
One hour before 
  • make the jerk chicken casserole and place in the oven
10 minutes before 
  • cook the prawns and serve with the mango dip
Just before your main
  • crisp the jerk chicken and prepare the jerk sauce

Top Tips

  • Dont have the frying pan too hot to crisp the jerk chicken as the skin will catch easily
