This menu is inspired by traditional North African ingredients but with a hint of spice from the Orient.
The starter is a spicy butternut soup with chilli coriander and star anise.
The main is a traditional tagine of chicken and tomatoes flavoured with honey, tumeric, cinnamon and ginger served with lemon and coriander couscous.
The dessert is made from three very popular ingredients in the North Africa in particular Morocco – oranges, honey and pistachios. The cake base uses ground pistachio instead of flour to form the sponge, this is topped with a fresh orange whipped cream and then coated in a dark chocolate and honey icing
