Spinach and Feta Filo Parcel with Greek Salad Recipe

Crisp filo pastry encasing a mixture of spinach, onions and creamy goats cheese, flavoured with garlic, oregano, nutmeg and lemon juice served with a traditional Greek salad of tomatoes, cucumber, black olives and feta cheese, dressed with a lemon and mint dressing

Recipe Ingreds

Parcels

  • black pepper (to taste)
  • 20 grams butter
  • 0.75 tsp oregano (dried)
  • 1 whole egg
  • 50 grams feta cheese
  • 2 sheets filo pastry
  • 2 cloves garlic
  • 0.25 tsp ground nutmeg
  • 1 tsp fresh lemon juice
  • 0.5 tbsp olive oil
  • 0.5 whole onions
  • salt (to taste)
  • 150 grams Spinach

Salad

  • 60 grams black olives
  • 75 grams cherry tomatoes
  • 0.5 whole cucumber
  • 50 grams feta cheese
  • 0.5 whole red onions

Dressing

  • black pepper (to taste)
  • 1 tsp fresh lemon juice
  • 2 tbsp olive oil
  • salt (to taste)
  • 2 grams caster sugar
  • 4 sprig fresh mint

Recipe with pictures Steps

Step 1

  • remove the pastry from the fridge
  • heat the olive oil in the frying pan
  • peel and chop the onion(s) finely
  • add to the frying pan
  • cook for 5 minutes

Step 2

  • peel and crush the garlic using the garlic crusher or chop finely
  • add to the frying pan
  • cook for a minute or two

Step 3

  • wash the spinach
  • remove the stalks
  • add the spinach to the large pan
  • place on a low light wilt the spinach
  • squeeze out the access water from the spinach leave to cool
  • Chop the spinach

Step 4

  • add the onion mixture to the spinach
  • crumble the feta cheese over the mixture

Step 5

  • squeeze the lemon(s) .
  • place the egg(s) in a small bowl
  • beat the egg
  • add the egg, oregano, nutmeg and lemon juice to the spinach bowl
  • mix the ingredients
  • taste and season with salt and pepper if necessary

Step 6

  • set the oven to 180C 350F or gas mark 4
  • grease a baking tray
  • melt the butter in a small bowl in the microwave, or in a small pan

Step 7

  • place the filo pastry under the cling film to keep moist
  • take each layer of filo and one at a time coat the pastry in butter
  • place three layers of pastry on top of each other
  • cut the filo in half
  • cut each half in half again diagonally

Step 8

  • place the spinach mixture on one half of the triangle and fold the pastry over corner to corner seal with butter
  • place on the baking tray
  • Butter the edges and fold over
  • cut vents in the top
  • glaze the top with the butter

Step 9

  • repeat until you have completed all the parcels
  • place in the oven
  • cook for 20 mins
  • until golden brown

Step 10

  • place a cross on the top of the cucumber
  • then slice the cucumber to form quarters
  • wash the cherry tomatoes and then slice in half
  • peel and chop the onion(s) finely
  • cut the feta cheese into cubes
  • slice the olives
  • mix the salad ingredients together in a bowl

Step 11

  • wash and finely chop the fresh mint
  • squeeze the lemon(s) .
  • mix the dressing ingredients together in a bowl
  • add the dressing to the salad

Step 12

  • remove the parcels from the oven
  • place a couple of parcels and a portion of salad onto individuals serving plates
  • serve immediately
