Strawberry & Rhubarb Crumble

Strawberry & rhubarb crumble – rhubarb and strawberries stewed in brown sugar and apple juice topped with a rolled oat and ginger crumble served with vanilla ice-cream

How it's doneDirections

Step 1

sieve the flour and the ginger, add to the bowl

Step 2

add the oats, to the bowl

Step 3

add the brown sugar, to the bowl, mix together

Step 4

melt the butter, add the butter to the dry ingredients, mix together, set a side

Step 5

wash the strawberries, dry the strawberries, hull the strawberries, cut the strawberries into slices, add to the pan

Step 6

wash the rhubarb, cut the rhubarb into slices, add to the pan

Step 7

squeeze the lemon(s) .  zest the lemon(s) add to the pan

Step 8

add the sugar, to the pan

Step 9

add the apple juice to the pan

Step 10

Bring to the boil and simmer, for 10 minutes, until the rhubarb is tender

Step 11

dissolve the cornflour in a couple tbsps of water, add the cornflour to the pan stir for a minute or two until thickened set a side

Step 12

Butter the oven proof dish add the fruit mixture to the dish spread the crumble over the fruit mixture bake for 35 mins
remove from the oven rest for 5 mins

Step 13

place a serving in a bowl, serve with vanilla icecream

  • 200 grams plain flour
  • 140 grams rolled oats
  • 120 grams sugar brown
  • 1.5 tsp ground ginger
  • a pinch of salt
  • 100 grams butter
Fruit
  • 200 grams rhubarb
  • 250 ml apple juice
  • 200 grams sugar brown
  • 1 lemon
  • 1.5 tbsp corn flour
  • 600 grams strawberries
  • ice-cream(vanilla) to serve
