Spaghetti with Pureed Tomatoes, Red Pepper, Basil and Mint

Freshly cooked spaghetti blended with pureed raw tomato & pepper sauce , lightly cooked and sprinkled with finely grated parmesan served with crispy garlic bread

How it's doneDirections

Step 1

Set the oven to 200C 400F or gas mark 6

Step 2

Half fill a large pan with water and boil, add a spot of olive oil and a pinch of salt to the boiling water.

Add the pasta to the boiling water and cook until tender but with a slight bite

Step 3

Half fill a medium pan with water and boil, prick tomatoes and place in boiling water for 5 mins

Step 4

Put the garlic bread on the baking tray and place in the oven follow cooking instructions on packaging

Step 5

Wash and slice the peppers into strips

Step 6

Drain the tomatoes and place in cold water. Remove the skins from the tomatoes. Chop tomatoes and remove any hard central parts of the tomatoes. Place the tomatoes in the food processor

Step 7

Season with salt and pepper

Step 8

peel and crush the garlic using the garlic crusher or chop finely

Step 9

Add the peppers, mint, garlic to the food processor, blend until smooth

Step 10

Add the pasta to a frying pan

Step 11

Wash and tear the basil leaves. Add the oil, pureed sauce and basil to the frying pan. Taste and season with salt and pepper if necessary remove garlic bread from the oven.

Step 12

Share the contents of the pan equally between the serving bowls, serve with grated parmesan, and garlic bread
