Mushrooms Stuffed With Cashew & Peas

Mushrooms stuffed with cashew nuts, peas, and ricotta cheese , cooked in a spicy tomato sauce served with a garlic naan bread


How it's doneDirections

Step 1

To make the stuffing roughly chop the cashew nuts. Peel and finely chop the red onion then wash and finely chop the chilli.

Defrost the peas.

Mix all the stuffing ingredients together

Step 2

Remove the stalks from the mushrooms.

Step 3

Place the stuffing inside the mushrooms, set the oven to 200C 400F or gas mark 6.

Step 4

To make the sauce heat the frying pan and add the butter, cloves, bay leaves and cinnamon stick.

Cook till the cloves swell

Step 5

Peel and chop the onion(s) finely.

Add the onions to the frying pan and cook until soft

Step 6

Peel and grate the ginger, add to the frying pan.

Step 7

5 Minutes

Peel and crush the garlic using the garlic crusher or chop finely, add to the frying pan.

Cook for 5 minutes

Step 8

5 Minutes

Add the mushrooms, cook for 5 minutes.

Step 9

Add the tomatoes, the spices and the sugar, season with salt and pepper.

Step 10

10 Minutes

Remove the mushrooms from the pan, stir the sauce and add to a casserole dish.

Place in the oven and cook for 10 mins.

Step 11

Five minutes before the mushrooms are ready, place the naan in the oven.

Remove the mushrooms from the oven.

Step 12

Place the mushrooms on the serving plates, add the sauce.

Remove the bread from the oven, add to the plate serve immediately.

  • 25 grams Peas (Frozen)
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 Fresh Chilli
  • 2 Mushrooms (Flar)
  • 1 tbsp Butter
  • 2 Cloves
  • 3 Bay Leaves
  • 1 Cinnamon Stick
  • 1 Onion
  • 1 Garlic Clove
  • 1 cm Fresh Ginger
  • 150 grams Tinned Tomatoes
  • 1/4 tsp Turmeric
  • 1/4 tsp Chilli Powder
  • 1/4 tsp Salt
  • 1/2 tsp Brown Sugar
  • 1/4 tsp Garam Masala
  • 1 Naan Bread
