Garlic Steak Fajitas with a Lettuce and Avocado Salad

A char grilled steak marinated with garlic and fajita spices. Combined with red peppers and onions encased in a wrap. Served with a tomato, cucumber, parsley and chilli salsa, a chipotle cream and a crispy lettuce and velvety avocado salad

How it's doneDirections

Step 1

  • Cut the garlic into slivers
  • Make small cuts in the steak insert the garlic slivers into the steak
  • Rub the meat with the olive oil
  • Rub the fajita seasoning into the meat refrigerate overnight

Step 2

  • Remove the meat from the fridge
  • If warming the wraps in the oven
  • Set the oven to 190C 375F or gas mark 5

Step 3

  • Peel and finely chop the red onion
  • Peel the cucumber and cut into cubes
  • Wash and finely chop the chilli
  • Wash and chop the tomatoes

Step 4

  • Wash and finely chop the fresh parsley
  • Mix the salsa ingredients together, set a side
  • Mix the cream ingredients together set a side

 

Step 5

  • Peel and finely slice the onion(s)
  • Wash and slice the peppers into strips
  • Oil the griddle pan heat the griddle pan ensure the pan is hot

Step 6

  • Add the steak cook for 2 to 3 minutes each side
  • Remove from the pan and set a side. for 5 minutes

Step 7

while the steak is cooking

  • Warm the wraps in the microwave for 30 seconds or cover the wraps in foil and place in the oven for 5 mins till warm
  • Heat the frying pan add a spot of oil
  • Add the onions, add the peppers to the frying pan cook for 3 to 4 mins
  • Add some fajita spice cook for a minute or two

Step 8

  • Cut the avocado(s)  in half remove the stone and skin, slice lengthways into thin slices
  • Squeeze the lime(s)
  • Toss the avocado in the lime juice
  • Shred the lettuce
  • Make a salad of lettuce and avocado
  • Cut the steak into 2cm slices add to the wrap

 

Step 9

  • Add the vegetables to the wrap
  • Add the salsa and the cream roll the wrap
  • Serve with the salad

  • 200 grams sirloin Steak
  • 2 cloves garlic
  • 4 tbsp fajita seasoning
  • 1 tsp olive oil
  • 1 red onions
  • 1 bell pepper (red)
cream
  • 50 ml Mayonnaise Light
  • 100 ml sour cream
  • 1 tsp chipotle paste
Salad
  • 1/4 lettuce
  • 1 avocado
  • 1/2 lime
salsa
  • 1 chilli
  • 1/2 cucumber
  • 3 tomatoes
  • 3 tbsp Olive Oil
  • 6 sprig fresh parsley
  • 1 tsp sugar brown
