Chianti Baked Lentil Meatballs

Lentil meatballs flavoured with olives, parmesan and chilli covered in a tomato and chianti sauce served on a bed of al dente spaghetti

How it's doneDirections

Step 1

Set the oven to 220C 425F or gas mark 7

Step 2

Heat the olive oil in the frying pan.

Step 3

To make the meatballs

  • Peel and chop the onion(s) finely.
  • Peel and crush the garlic using the garlic crusher or chop finely.
  • Chop the olives

Step 4

  • Using a food processor blend the bread into fresh breadcrumbs.
  • Wash and drain the lentils, add to the food processor blend to a fine crumb
  • Finely grate the Parmesan
  • Add the onions, garlic, cheese and olives to the bowl and mix

Step 5

  • Wash and finely chop the chilli.
  • Wash and finely chop the fresh parsley.
  • Add the ingredients to a bowl.
  • Stir to mix the ingredients.

Step 6

  • Take a large spoonful of the mixture and with damp hands shape the mixture into a meatball.
  • Place a drop of oil in the oven proof dish.
  • Lightly toss the meatballs in the olive oil.
  • Place in the oven cook for 10 mins.

Step 7

  • Wash the cherry tomatoes and then slice in half.
  • Remove the meat balls from the oven.
  • Add the wine add the cherry tomatoes.
  • Place in the oven cook for 10 mins.

Step 8

  • Remove from the oven.
  • Add the tinned tomatoes.
  • Add the sugar.
  • Add the basil.
  • Place in the oven cook for 15 mins to 20 mins

Step 9

  • Half fill a medium pan with water and boil.
  • Add a spot of olive oil and a pinch of salt to the boiling water
  • Add the pasta to the boiling water and cook until tender but with a slight bite.

Step 10

Put the garlic bread on the baking tray and place in the oven follow cooking instructions on packaging


Step 11

Remove meatballs from the oven taste and season with salt and pepper if necessary

Step 12

  • Reserve a few tbsps of cooking liquid from the pasta
  • Drain the pasta

Step 13

  • If the sauce is a bit thick add the reserved pasta water.
  • Divide the pasta between the serving plates.
  • Place 3 to 5 meatballs on each plate and share the sauce between the serving dishes.
  • Remove garlic bread from the oven serve the pasta with garlic bread

  • 150 grams spaghetti
  • 250 grams green lentils (tin 390g)
  • 1/2 onion
  • 1 garlic clove
  • 25 grams black olives
  • 1/2 sliced bread (brown)
  • 15 grams parmesan
  • 1/2 tsp paprika
  • 1/2 fresh chilli
  • 1 1/2 tbsp fresh parsley
  • salt - to taste
  • black pepper - to taste
  • 1 tbsp olive oil
  • 125 ml red wine (Chianti)
  • 100 grams cherry tomatoes
  • 400 grams tinned tomatoes
  • 1 tsp sugar granulated
  • 4 sprigs fresh basil
  • black pepper - to taste
  • salt - to taste
  • 1 garlic bread
