Broad Bean Patties with Redcurrant Sauce and Dauphinoise Potatoes

Patties made with broad beans, parsnip and carrots flavoured with lemon and parsley.  Served with creamy dauphinoise potatoes, slices of potato, and onions cooked in cream with a crisp cheese topping. With a side of fresh green broccoli. This delicious meal is served with a rich redcurrant sauce

How it's doneDirections

Step 1

  • Peel and thinly slice the potatoes.
  • Peel and finely slice the onion(s).
  • Grease the oven proof dish with the olive oil.
  • Add a layer of potatoes, then a layer of onions, season with salt and pepper.
  • Repeat layers ending with a potato layer

Step 2

  • Mix together the milk and cream, pour over the potatoes.
  • Cover with cling film, place in the microwave cook for 10 mins

Step 3

  • Grate the cheese, sprinkle the cheese over the potatoes.
  • Place in the oven, cook for 15 mins to 20 mins

Step 4

Make the patties

  • Peel and chop the onion(s) finely.
  • Peel and grate the carrots.
  • Peel and grate the parsnips.

Step 5

 

Heat the frying pan and add the onions, cook for 3 to 4 mins.

Step 6

  • Add the carrots.
  • Add the parsnip.
  • Cook for 5 minutes.
  • Add the contents of the frying pan to the bowl.
  • Stir and leave to cool

Step 7

  • Drain and rinse the butter beans.
  • Mash the butter beans with a fork.
  • Add to the bowl.

Step 8

  • Zest the lemon(s).
  • Wash and finely chop the fresh parsley.
  • Add to the bowl.
  • Create small patties

Step 9

  • Heat the olive oil in the frying pan
  • Add the patties to the pan cook for 5 minutes each side

Step 10

  • Place the jelly in a pan and melt
  • Wash and finely chop the fresh rosemary add to the pan
  • Peel and crush the garlic using the garlic crusher or chop finely add to the pan.
  • Add the wine, heat the sauce until it thickens stir regularly

Step 11

  • Wash and cut the broccoli into florets.
  • Place in serving bowl cover with cling film.
  • Place in the microwave cook for 3 to 4 mins

Step 12

  • Remove the potatoes from the oven
  • Place the patties on a plate
  • Add a portion of potatoes
  • Add the broccoli
  • Serve with the sauce

  • 2 cloves garlic
  • 4 tbsp red wine
  • Salt - to taste
